
Pam's Folly
This Dessert wine was first made in 2004 and is Fruit Drying On Strawbased very loosely on the Jura, 'Vin du Paille' style (fruit dried on straw). Our fruit is left on the vine to develop a small amount of Botrytis, hand picked and dried (dehydrated) on a bed of fresh straw until shrivelled to around 50% of its original weight. The wine was named after Pam who showed great determination to ensure this venture came to fruition.
Winemaking: Once dried to an appropriate level, the fruit is crushed and pressed gently and slowly to extract all the juice close to the skins. Typically a long, slow fermentation is stopped with a residual sugar level around 150-200 g/L. Bottling takes place around December and is in 375ml bottles.
Grape Clones: MS and BDX 116/7 on various rootstocks
Tastes/Aromas: A very opulent nose of ripe apricots, honey, wild passionfruit, citrus with hints of dried straw give this wine instant appeal. The palate is rich and beautifully balanced with a long finish which is not too sweet and cloying. This wine should reward careful cellaring of up to 5 or more years.
